Derek who currently works for a cheese manufacturing plant in Ontario, Canada has been a barbecue blogger for the past 6 years.
Derek likes to blend Texas and Kansas City styles of bbq together but always with a Canadian twist.
Derek does a lot of work with JTK Farms Meat Shoppe doing Saturday cooks for their customers during the spring to fall seasons as well as teaching barbecue classes. He loves helping people reach their potential and take their food to the next level.
One of his greatest barbecue achievements was cooking in the 2019 Toronto Smoke Show. Having gone down with over 75lbs of food to help feed over 3000 people. This event is where the phrase “cheese porn” was created. The crowds having stopped to watch Derek do his melted cheese trick, topping off the Peameal sliders.
Going forward Derek hopes to continue to teach more food classes as well as continue to learn new skills to further his cooking arsenal.
